The maritime influence of the Indian Ocean ensures even temperatures providing consistently good conditions for producing very high quality grapes and some of Australia’s finest wines.
From relatively cool vineyards, the Cabernet merlot blend is a wine with cassis and dark fruits on the nose and some faint herbaceous notes that takes inspiration from the classic red wines of Bordeaux. Medium to full-bodied palate with more cassis and herbaceous flavours, with sweet ripe fruits of mulberry, plums and currants. The structure is fine with cocoa powder with a touch of spice. 64% of the blend is Cabernet Sauvignon, 29% Merlot, with 5% Petit Verdot and 2% Cabernet Franc making up the balance. The aroma is perfumes candied violets, cloves and black currant, with an intriguing meaty note and hints of cocoa.
