The grapes are harvested at low temperature and kept in cold maceration for about 7 days. After the pressing, when I’m still must, I ferment at temperature not above 14°C for the entire duration of vilification which it took 30-40 days. I rest on the lees for over 3 months with continuous baronage that allow me to kept unadulterated my perfumes. After assembly I rest for a month in the tank before bottling
