DESCRIPTION

Chimay Blue was first produced as a Christmas beer but became so popular they had to brew it all year long. It is a dark Trappist beer with a powerful aroma, and a complex flavour which improves across the years. It is considered to be the "classic" Chimay ale. Chimay Blue is principally distinguished by its character of a strong beer. It is also characterized by a vintage, meaning it can be cellared for several years and enjoyed when aged with different, more complex aromas. It can be aged up to 15 years.

COMBINING CHIMAY BEER AND CHEESE

Four steps for an ideal tasting:

  1. Sip your beer delicately.
  2. Then taste a piece of cheese without the rind.
  3. Take another piece of cheese, this time with the rind.
  4. Finally, take a generous mouthful of beer to mix the two on your tongue.

My favorite

A fruity dark beer that tastes darker with age. Not too hoppy. It ages well, but for a frothy head, drink a recent vintage. If you like dark beers like Cerveza Negra, this is it! Even better than Gulden Draak and the Guinness Draught

A satisfying dark brew

Chimay Blue is liquid bread. Notes of malt and hops on the nose, a bitter dark chocolate palate, and a surprisingly sweetish, refreshing and smooth finish.

SUPER good

It’s strong, but not too strong that you won’t enjoy, it. Very earthy and sweet, complex—the words don’t do this drink justice. It’s super, SUPER good.

Oh man, other people were not wrong; this beer is one of the, if not THE best I've ever tasted. Can't get enough of it!
