Syrah is a noble Mediterranean grape which can reach a wonderful expression also in Sicily. Our Syrah grows on the hills of Sambuca, with perfect sun exposure on a fresh soil with a combination of limestone and clay. The climate excursion between day and night helps the plants to develop an intense and pleasant spicy, fruity note.
The grapes are lightly pressed to avoid green tannins. Maceration at controlled temperature for about 10-12 days. The must is reassembled every 4 hours. Ageing in stainless-steel tanks.
