Winemaking
The grapes are hand-harvested and gently pressed, with the must kept in stainless steel tanks at low temperature to preserve freshness and aroma. Fermentation takes place in an autoclave for about 40 days at 14–15°C using the Charmat method, creating its fine bubbles and vibrant character.
