Proclamation Gin is a small batch gin from the Philippines made with the finest sampaguita flowers, handpicked by women farmers in Central Luzon. Launched this 2021, Proclamation Gin celebrates the national flower (officially declared in the year 1934 on Proclamation 652), which is also symbolic of day-to-day life in the Philippines. It represents purity, humility and strength, which is strongly featured in the distillation process.

Purity pyu̇r-ə-tē

Ingredients

  • 50 ml Proclamation Gin
  • 30ml Coconut Milk
  • 15ml Evap
  • 30ml Tea syrup
  • 30ml Mango Juice
  • 15ml Lime Calamansi
  • Dried Mango
  • Rock glass

Method

  1. Combine 1 tea bag to 200 ml hot water and sugar for tea syrup.
  2. Pour all ingredients into one container except for the tea syrup.
  3. Transfer the batch to the hot tea syrup then stir. Wait until it curdles.
    Cover and leave in the fridge for 12 hours.
  4. Strain the contents to a cheese cloth initially. After which, get a coffee filter and strain the liquid until there is no more sediments or curdles.
  5. Pour in a rock glass with clear ice and garnish with a dried mango.

Humility hyü-ˈmi-lə-tē

Ingredients

  • 45ml Gin
  • 1⁄2 slice Fresh Mango
  • 15 ml Honey
  • 15 ml Lime
  • Coupe glass

Method

  1. Pour all ingredients in a cocktail shaker with ice.
  2. Muddle.
  3. Shake and strain in a coupe glass.
  4. Garnish with orange zest.
