Origin and where it is grown:
Sauvignon Blanc got its name from the French word “sauvage” which means wild and “blanc” which means white. It’s a green-skinned grape variety that originates from France’s Loire Valley and is also grown in the famous Bordeaux Region alongside Sémillon for white Bordeaux blends. Nowadays, Sauvignon Blanc is grown and is famous globally. It is cultivated all over the world’s wine regions, producing a crisp, dry, and refreshing aromatic white wine.
The first cuttings of Sauvignon Blanc were brought to California in the 1880s. In the 1970s, the grape was introduced to New Zealand and since then has been one of New Zealand’s signature grapes. Today, you can find bottles of Sauvignon Blanc grown everywhere – France, Chile, Romania, Canada, Australia, South Africa, Bulgaria, as well as Washington and California in the United States.
Sauvignon Blanc’s flavor profile:
Sauvignon’s flavor can go from aggressively grassy to sweetly tropical depending on the climate it’s grown from. Grapes produced in cooler climates - like the archetypal Sancerre AOP from France’s Loire Valley - have more prominent acidity and “grassy” flavors of gooseberry, green bell peppers or asparagus, citrus notes of lemon or grapefruit, and often floral or mineral notes.
In the New World, particularly in the now eponymous Marlborough Valley in New Zealand, it can develop more tropical fruit notes like pink guava, passion fruit, or mango along citrus notes of grapefruit or lime.
Whether Old or New World, a great Sauvignon Blanc should always be light-bodied, show medium- to high-intensity aromas, and exhibit a crisp, zingy acidity; all traits that allow it to be great on its own, but also have a fresh, palate-cleansing profile that holds its own against a whole range of food.
Food pairing:
With its bracing acidity, mineral notes, and citrus and tropical fruit notes, Sauvignon Blanc is a natural pair for food that benefits from a spritz of lime or a dash of vinaigrette: all kinds of fresh and grilled seafood, sushi, and salads.
Its usual vegetable “green” notes also make it one of the few wines that pair very well with vegetable dishes with asparagus, green beans, or even arugula and other bitter greens.
Lastly, its unique pair of high acid alongside grassy flavors make it the classic wine pairing to bring out the salty, rich flavors of goat cheese (try to look for those from the Loire Valley - what grows together goes together!) or Manchego.
